Oatmeal Banana Muffins

Ingredients
  1. coconut oil
  2. 2 large eggs, lightly beaten
  3. 1 tsp pure vanilla extract
  4. 2 large bananas, mashed
  5. 1 T raw honey
  6. 2 1/2 cups old fashioned rolled oats
  7. 1 T ground cinnamon
  8. 1 1/2 tsp baking powder
  9. 1 1/2 cups unsweetened almond milk
Instructions
  1. Preheat oven to 350 degrees.
  2. Coat muffin tray with coconut oil
  3. Mix eggs, vanilla, bananas and honey in a large bowl. Mash bananas and mix well. Set aside.
  4. Combine oats, cinnamon and baking powder in a small bowl, stir well and combine with wet mixture
  5. Stir in almond milk.
  6. Divide batter evenly between muffin tin and add any toppings! (chocolate chips, berries etc)
  7. Bake 20 to 25minutes or until brown
